    Steps in Making the Molasses Cookies

    Step 1: Preheat oven to 325°F and lightly grease 2 large baking sheets or line with parchment paper.

    Step 2: In a large bowl whisk together flour, salt, baking soda, ginger, cloves, and cinnamon.

    Step 3: In another large bowl with an electric mixer beat together butter, shortening, and 3 cups sugar until light and fluffy and beat in molasses. Beat in eggs, 1 at a time, beating well after each addition. Gradually beat in the dry ingredients and combine well.

    Step 4: In a small shallow bowl put remaining ½ cup sugar. Form dough into 2-inch balls and roll in sugar. On baking sheets arrange dough balls about 4 inches apart and flatten slightly with bottom of a glass dipped in sugar.

    Step 5: Bake cookies in batches in middle of the oven 15 minutes, or until puffed and golden. (Cookies should be soft.) Transfer cookies with a metal spatula to racks to cool.

    • ⅔ cup packed dark brown sugar
    • 1 Tbsp. ground ginger
    • 1½ tsp. ground cinnamon
    • ½ tsp. ground allspice
    • ½ tsp. ground cloves
    • 2 tsp. baking soda
    • 2 sticks (1 cup) unsalted butter, cut into 16 pieces
    • 1 large egg, lightly beaten
    • 3¾ to 4 cups all-purpose flour
    • ½ tsp. kosher salt

    Steps in Making the Christmas Ginger Bread

    Step 1: Bring molasses, brown sugar, and spices to a boil in a 4- to 5-quart heavy saucepan over moderate heat, stirring occasionally, and remove from heat. Stir in baking soda (mixture will foam up), then stir in butter 3 to 4 pieces at a time, letting each addition melt before adding next, until all butter is melted. Add egg and stir until combined, then stir in 3¾ cups flour and salt.

    Step 2: Preheat oven to 325°F.

    Step 3: Transfer dough to a lightly floured surface and knead, dusting with as much of remaining ¼ cup flour as needed to prevent sticking, until soft and easy to handle, 30 seconds to 1 minute. Divide dough in half, then wrap one half in plastic wrap and keep at room temperature.

    Step 4: Roll out remaining dough into a 14-inch round (⅛-inch thick) on a lightly floured surface. Cut out as many cookies as possible with cutters and carefully transfer with offset spatula to 2 buttered large baking sheets, arranging them about 1 inch apart.

    Step 5: Bake cookies in upper and lower thirds of oven, switching position of sheets halfway through baking, until edges are slightly darker, 10 to 12 minutes total (watch carefully toward end of baking; cookies can burn easily). Transfer cookies to wire racks to cool completely. Make more cookies with remaining dough and scraps (reroll once).

    Decorating icing and assembly:

    Step 6: Beat together the powdered sugar, powdered egg whites, lemon juice, vanilla extract, and ⅓ cup water in a large bowl with an electric mixer at moderate speed until just combined, about 1 minute. Increase speed to high and beat icing, scraping down side of bowl occasionally, until it holds stiff peaks, about 3 minutes in a standing mixer or 4 to 5 minutes with a handheld. Note: If you plan to spread (rather than pipe time, to thin to desired consistency.

    Step 7: If using food coloring, transfer ¼ cup icing to a small bowl for each color and tint to desired shade. Spoon icing into a pastry bag (if using), pressing out excess air, and snip a ⅛-inch opening in corner of bag. Twisting bag firmly just above icing, decoratively pipe icing onto cookies. Decorate with sprinkles, sanding sugar, and dragées, if using. Let icing dry completely (about 1 hour) before storing cookies. 

    Do ahead: Gingerbread cookies keep in an airtight container at room temperature 3 weeks.

    I saw this movie as a kid in middle school and I couldn’t help but love the twist of the dynamic duo. As the viewers, we were completely aware of the language of the rats as it was as clear as human speech to us, but squeaks to the humans, whereas Remy and the others can clearly understand the former. Normally, I’m not one to constantly re-watch a show or movie, but it’s easily one of my favorite Disney films and I would watch it again with high recommendations to see with friends and/or family.     Ingredients:

    Yield:3 dozen cookies

    • 1cup/230 grams unsalted butter, at room temperature
    • 1cup/207 grams granulated sugar
    • 1teaspoon kosher salt (such as Diamond Crystal)
    • 1 to 2large egg yolks
    • 2½cups/320 grams all-purpose flour (see Tip)
    • 1 large egg white, beaten
    • ½cup decorative sugar

    Instructions:

    1. Step 1Make the dough: In the bowl of a stand mixer fitted with the paddle attachment, combine the butter, sugar and salt. Beat on low speed until incorporated and smooth, scraping down the sides of the bowl as needed, about 3 minutes. (Do not beat until fluffy, you don’t need to incorporate air into the dough.) Add the egg yolk and mix until just combined. Turn the mixer off and scrape down the sides of the bowl.
    2. Step 2Add the flour to the bowl all at once and scrape the bottom and sides of the bowl. Turn the mixer speed to low and beat until flour is fully incorporated, scraping the bowl again if needed, about 30 seconds. The dough will be in large crumbles.
    3. Step 3(If you’re starting with a half batch of Butter Shortbread Dough, start here.) Form the dough into two 9-inch logs. (If the dough is too crumbly to form into a log, mix in an additional egg yolk.) Wrap each log firmly in a strip of parchment paper and twist the ends shut. Refrigerate until the dough is firm enough to slice, about 30 minutes and up to 3 days.
    4. Step 4Heat the oven to 350 degrees. Line a baking sheet with parchment paper.
    5. Step 5Brush the surface of each log all over with the egg white. Sprinkle a sheet of parchment paper with the decorative sugar and roll the log in the sugar to completely coat. Slice each log into ½-inch rounds. Lay the rounds on the prepared baking sheet, spacing at least ½ inch apart.
    6. Step 6Bake until the cookies are golden at the bottom edges, rotating once halfway through baking, 18 to 22 minutes. Move the cookies to a wire rack to cool completely. Store at room temperature in an airtight container for up to 3 days. The baked cookies can also be stored frozen in an airtight container for up to 10 days. Thaw at room temperature before serving.

    TIP

    • If using volume measurements, using a spoon, fluff and scoop the flour into a measuring cup, then scrape with a straight edge to level the surface. This will help prevent adding too much flour which can yield overly crumbly dough.

    Stepping back in time to 2008 we have Kung Fu Panda the DreamWorks blockbuster directed by Mark Osborne and John Silverman starring Jack Black, Dustin Hoffman, and Angelina Jolie, it goes without saying the level of star power that this ensemble has with actors such as Seth Rogen Jackie Chan and Lucy Liu in supporting roles alongside very familiar voices such as Michael Clarke Duncan.

    If you’ve seen “Kung Fu Panda” already then you can probably stop reading this blog post right now, but for those of you who haven’t watched it yet or if you like me and want to brush yourself up on the story before dipping your toes into the next two installments in time for “Kung Fu Panda 4” here’s a summary.

    The story follows Po voiced by Jack Black, and clumsy and lazy panda who works at a ramen shop alongside his adopted father in the Valley of Peace, Po has secret aspirations of becoming a Kung Fu legend but when the evil Tai Lung threatens what’s the safety of Po’s homeland it’s up to Po to fulfill an ancient prophecy, with the help and training of Master Shifu Po’s must prepare himself to save his homeland from Tai Lung’s assault. One of the most vivid memories that I have about this film besides Jack Black’s performance, that of a silly underachiever which he always seems to excel at playing in a lot of his movies, was the action.

    Without spoiling too much of the film one scene I remember was when Tai Lung breaks out of prison, after escaping his shackles it was a bit shocking to see some of the rhino prison guards being thrown to their deaths in a failed attempt to prevent Tai Lung’s escape.

    “Kung Fu Panda” falls under the category of a kid’s movie that’s so good that it can be enjoyed by everyone of any age, for a 15-year-old movie is looking for a good movie for the whole family to enjoy if you want to brush up on you Kung Fu Panda lore before the fourth movie comes out next year this is a prime opportunity to start now.

This collaboration opens a unique door of exploration into the fascinating world of movies. Today, we will be focusing on a cinematic masterpiece – The Menu.     The Menu. Oh, The Menu. Directed by Mark Mylod, The Menu is one of those exceptional films that sits with you for a couple weeks. You’ll be in the shower, on the train, in the gym thinking about The Menu and so much of that is based on the fact that at its core The Menu represents a story that is not only as old as time, but profoundly sad. 

    Everybody serves a purpose in this world. There is something that only we can do the way we do it. For those of us who are able to figure this specific thing out, it becomes our purpose. We start off young. Naive. Doe-eyed people searching for a way to prove that our form of individuality can defend why I deserve to exist. A savant in their particular field. But the burden of success is often overlooked. Very rarely do we understand what makes someone good at something. Nobody is born great. Hard work and dedication makes somebody who they are. They earn their declaration of the top. So why is it that the top becomes so sad and lonely. 

    There’s a sadness to success…

    The Menu conveys the tragedy of success and the death of passion that follows in pursuit. The head chef that we study from a variety of perspectives in this film, Chef Slowik has prepared his final menu. I don’t wish to spoil the movie but in general these interactions are draining to Slowik as these affluent customers pay more but they care much less about what it takes to make the food. It is all about status. This I relate to. I struggle to work around/with people who lack passion. I am extremely motivated by wanting to do the things I do. I understand that not everyone feels that way but it kills someone who does. Someone who cannot cut it off. The beauty of this story is that it has its catharsis. That pain is alleviated one last time for Chef Slowik as he got to make the meal that made him fall in love with cooking all those years ago— a cheeseburger. A regular greasy, good ol’ fashioned American cheeseburger with fries. And in the end, even those who lacked passion were moved by the Chef’s final menu. I cannot stress enough how much I recommend The Menu, especially to creatives.
