    • 2¼ tsp. baking soda
    • 2 tsp. ground ginger
    • 1¼ tsp. ground cloves

    • ½ cup vegetable shortening
    • 3½ cups sugar, divided
    • ½ cup unsulphured molasses
    • 2 large eggs

    Steps in Making the Molasses Cookies

    Step 1: Preheat oven to 325°F and lightly grease 2 large baking sheets or line with parchment paper.

    Step 5: Bake cookies in batches in middle of the oven 15 minutes, or until puffed and golden. (Cookies should be soft.) Transfer cookies with a metal spatula to racks to cool.

    • 1 large egg, lightly beaten
    • 3¾ to 4 cups all-purpose flour

    Steps in Making the Christmas Ginger Bread

    Step 1: Bring molasses, brown sugar, and spices to a boil in a 4- to 5-quart heavy saucepan over moderate heat, stirring occasionally, and remove from heat. Stir in baking soda (mixture will foam up), then stir in butter 3 to 4 pieces at a time, letting each addition melt before adding next, until all butter is melted. Add egg and stir until combined, then stir in 3¾ cups flour and salt.

    Step 2: Preheat oven to 325°F.

Note: If you plan to spread (rather than pipe time, to thin to desired consistency.

    Step 7: If using food coloring, transfer ¼ cup icing to a small bowl for each color and tint to desired shade. Spoon icing into a pastry bag (if using), pressing out excess air, and snip a ⅛-inch opening in corner of bag. Twisting bag firmly just above icing, decoratively pipe icing onto cookies. Decorate with sprinkles, sanding sugar, and dragées, if using. Let icing dry completely (about 1 hour) before storing cookies. 

    Do ahead: Gingerbread cookies keep in an airtight container at room temperature 3 weeks.

    • 1cup/207 grams granulated sugar
    • 1teaspoon kosher salt (such as Diamond Crystal)
    • 1 to 2large egg yolks
    • 2½cups/320 grams all-purpose flour (see Tip)
    • 1 large egg white, beaten
    • ½cup decorative sugar

    Instructions:

    1. Step 1Make the dough: In the bowl of a stand mixer fitted with the paddle attachment, combine the butter, sugar and salt. Beat on low speed until incorporated and smooth, scraping down the sides of the bowl as needed, about 3 minutes. (Do not beat until fluffy, you don’t need to incorporate air into the dough.) Add the egg yolk and mix until just combined. Turn the mixer off and scrape down the sides of the bowl.

    4. Step 4Heat the oven to 350 degrees. Line a baking sheet with parchment paper.

    The Menu. Oh, The Menu. Directed by Mark Mylod, The Menu is one of those exceptional films that sits with you for a couple weeks. You’ll be in the shower, on the train, in the gym thinking about The Menu and so much of that is based on the fact that at its core The Menu represents a story that is not only as old as time, but profoundly sad. 

    Everybody serves a purpose in this world. There is something that only we can do the way we do it. For those of us who are able to figure this specific thing out, it becomes our purpose. We start off young. Naive. Doe-eyed people searching for a way to prove that our form of individuality can defend why I deserve to exist. A savant in their particular field. But the burden of success is often overlooked. Very rarely do we understand what makes someone good at something. Nobody is born great. Hard work and dedication makes somebody who they are. They earn their declaration of the top. So why is it that the top becomes so sad and lonely. 

    There’s a sadness to success…

    The Menu conveys the tragedy of success and the death of passion that follows in pursuit. The head chef that we study from a variety of perspectives in this film, Chef Slowik has prepared his final menu. I don’t wish to spoil the movie but in general these interactions are draining to Slowik as these affluent customers pay more but they care much less about what it takes to make the food. It is all about status. This I relate to. I struggle to work around/with people who lack passion. I am extremely motivated by wanting to do the things I do. I understand that not everyone feels that way but it kills someone who does. Someone who cannot cut it off. The beauty of this story is that it has its catharsis. That pain is alleviated one last time for Chef Slowik as he got to make the meal that made him fall in love with cooking all those years ago— a cheeseburger. A regular greasy, good ol’ fashioned American cheeseburger with fries. And in the end, even those who lacked passion were moved by the Chef’s final menu. I cannot stress enough how much I recommend The Menu, especially to creatives.

    1. In a big skillet over medium heat, melt butter. Add the mushroom and bacon. Cook for 12 minutes, stirring occasionally, or until butter is brown and melted. Add the herbs and garlic. Simmer for one minute, or until aromatic. Move to a bowl. Allow to cool for half an hour.
    2. Mix soup mix and breadcrumbs into mushroom mixture. Add pepper for seasoning.
    3. Set oven temperature to 200°C or 180°C with fan assistance. Use baking paper to line a baking tray.
    4. To the mixture, add the egg. Mix until well blended. Form mixture into 16 balls, using 2 level teaspoons at a time. 1 prosciutto slice should be wrapped around each ball. Transfer to the ready tray. Bake until golden, 15 to 20 minutes.

    Instructions:

    1. Prepare the cupcakes: Turn the oven on to 350°F. Press paper liners into two regular 12-cup muffin tins. In a bowl, whisk together flour, sugar, baking soda, baking powder, and cocoa powder.
    2. Use an electric mixer set to medium speed to beat together the oil, eggs, vanilla, buttermilk, and coffee for approximately one minute. Whisk in flour mixture until well blended, about one to two minutes. Transfer, dividing equally among the prepared pans (each cup should be about two-thirds full).
    3. Bake for 18 to 20 minutes, or until a toothpick inserted into the center of a cupcake comes out clean. After 15 minutes of cooling in the pans on a wire rack, move them to the rack to finish cooling.
    4. Prepare the buttercream: For one to two minutes, on medium speed, beat butter with an electric mixer until it becomes light and creamy. Add the milk, vanilla, cocoa powder, and two cups of powdered sugar and beat until well blended. Beat in the remaining two cups of confectioners’ sugar until well mixed. Mix with the appropriate quantity of food coloring. Spoon frosting into a piping bag and insert the large star decorating tip into the bag. Frost cupcakes with icing in a swirling pattern to resemble a Christmas tree. Top with a star and sprinkle with gold and pearl to make it seem ornamental.
